Tercio de las Torres olive oil has been traditionally produced by the Salas family since 2004. Each year, we do our best to elaborate one of the best extra virgin olive oil batches in Spain. We truly believe our oil is the best, and so do many prestigious chefs.

Tercio de las Torres is special because it harmoniously combines “picudo” and “picual” olives, which give softness and a slightly bitter taste.

We only produce a few bottles each year. Only by doing so can we guarantee the maximum quality of our product.

Why is it so good?

  • First, Tercio de las Torres is produced with olives that come from just one olive grove.
  • Second, we collect our olives during the first two weeks of November, when they are still unripe, so that its juice is pure and rich, although this means we can obtain 8% less of oil (which, inevitably, makes our product more expensive).
  • Third, olives are milled the same day they are colected to preserve its qualities.
  • Fourth, we let the oil mature for three months and do not filter it.

Our grove, “Finca la Catalana”, is located in Huétor Tájar (West Granada). A large field of 5.35 hectares.
