Tercio de las Torres is an olive oil that has been elaborated since 2004 by the Salas Family. Every year we use all our senses to elaborate one of the best olive oils in Spain. This is what we and several prestigious chefs believe. Back in the days when we were selecting the variety of olives that we planned to plant, we were aiming to have the most equilibrate oilev oil flavour when tasting it. In order to achive that, we analyzed the best variaties available in the Spainish market and decided to the conclusion that the best mix of varieties should be Picudo (60%) and Picual (40%). Giving as a result a magnificent olive oil virgen extra that is highly recommended to use in salads, vegetables, carpaccio and specially fish.

Tercio de las Torres comes from an unique olive tree plantation. Every year, in the first weeks of Novemeber, we recollect the olives from the trees in order to achive the most pure and flavourous olive oil. By doing this, we obtain 8% less in production. However, we value more the quality than the quantity (reason being that the product can get more pricy). Finally, the olive is smashed the same day of the recollection by a pressed cold tecnique to preserve its qualities. After that, we leave it resting withouth filtering it for 3 months. Every year, we produce a limited amount of bottles, in that way we can assure the maximum quality of the product.
