Early harvest

We harvest in November, before veraison. The still-green fruit retains the maximum amount of fruitiness, aromas, and polyphenols. This yields 8-12% compared to the standard 20-28%.

What makes early harvest special?

We harvest in the first half of November, before veraison, when the fruit is still green. This yields 8-12% compared to the standard 20-28% — we produce less, but the oil retains maximum fruitiness, aromas, and polyphenols. The olives are milled on the same day they are harvested.

Why is it unfiltered?

The oil is left to rest unfiltered for three months, allowing the natural sediments to gradually settle. It's an artisanal process that preserves all its properties and aromas intact. The result is a more vibrant oil, with more character and greater organoleptic richness.

How long does it last once opened?

We recommend consuming it within 6 months of opening to enjoy its maximum freshness and organoleptic properties. Store it in a cool, dark place, away from heat sources.

What exactly does it taste like?

Medium fruitiness with notes of olive leaves, apple, green almond, and banana. Balanced, very flavorful oil, with elegant bitterness and a low-intensity spicy finish—the signature of the 60% Picudo and 40% Picual blend.

How long does it take to arrive?
